
Fixing Those Annoying Cold Edges in Industrial Bread Ovens
If you’ve spent any time with large-scale bread ovens, you know the frustration of “cold edges.” You pull out a tray and the middle looks perfect, but the perimeter is pale. The crust is off, the crumb is inconsistent, and it’s a headache to fix. Standard convection or resistive heating just can’t keep up at the edges of the tray. We’ve found a way to stop that by using high-density shortwave infrared (IR) lamps. The problem with air Here’s the thing: most ovens rely on moving air to spread heat. But in a massive oven, those air currents tend to die out as they hit the walls. Our IR elements don’t bother with the air. They send electromagnetic radiation straight to the surface of the dough. It’s direct. It’s fast. By placing these lamps around the edges, you basically create a “thermal curtain” that stops the oven chassis from sucking the heat away from your bread. The gear inside We use quartz-halogen tech for this. The quartz shell can take the heat without warping, and the halogen cycle keeps the filament from burning out too quickly. It means the tubes actually last, even if you’re cycling them on and off all day. Setting them up is pretty straightforward. You can plug them right into your existing PID controllers. We have a few different wattage and voltage options depending on what your power grid can handle. One quick tip: high-wattage tubes gethot. Really hot. Just make sure your outer casing is well-insulated or vented so you don’t accidentally melt your external wiring.
